Herbs & Spices are defined as plant derived substances that add flavor to any dish, it is difficult to distinguish between the two.
Spices can come from the following plant parts: roots, rhizomes, stems, leaves, bark, flowers, fruits, and seeds, herbs are typically thought of as non-woody plants.
Herbs and spices are a great way to add flavor, color, and fragrance to dishes without adding extra fat, sugar, or salt. 
They also provide powerful antioxidants, and have a range of other health benefits, however same as everything else in life you need to recognize the limits to use them.
Herbs, like parsley, sage, rosemary, basil, thyme, and dill, are leaves and can be used fresh or dried.
Some of the health effects attributed to herbs and spices include antioxidant, anti-microbial, and anti-inflammatory effects as well as potential protection against cardiovascular disease, neurodegeneration, type 2 diabetes, and cancer.
